Raw Buckwheat Pancake Recipe
I was recently craving pancake and I must say that I enjoyed pancakes while we were travelling in Indonesia and Asia. I was wondering how I can still enjoy pancakes while sticking to my raw food lifestyle. One night I got an idea as I had some soaked and sprouted buckwheat left. We made pizza from buckwheat in the past so I thought I would make the dough sweet and yellowish as a pancake π
Here is the recipe!
Serves:
4-6
Equipment
High speed blender
Dehydrator
Ingredients:
1 cup soaked or sprouted buckwheat (I soaked buckwheat for about 18 hours, the best is to soak overnight)
3 teaspoons raw honey
3 teaspoons coconut nectar or other sweetener of your choice
2 pinches turmeric
3 pinches cinnamon
Directions:
Blend soaked buckwheat and all above ingredients in the blender. Make small round pancakes on the dehydrator’s sheets and dehydrate for about 4-5 hours (the pancakes shouldn’t be too dry and crispy)
I cut bananas and made 2 layer pancake with raw chocolate (here is the recipe for raw chocolate) garnish and raspberries on the top OR you can make chia pudding (I had leftover from my breakfast), spread your pudding on the top and garnish with raw chocolate again.
