Grilled Eggplant With Quinoa – Vegetarian Recipe

I’d like to thank all of you who have completed my readers survey for 2015. I have learned a lot from your suggestions and would like you to know that I really pay attention to what you say! 🙂 You can still complete the survey to ensure I know what you want from me and letting me know how I can help you.
In the survey, you have asked me to include more recipes which are not necessarily 100% raw vegan as most of you find it difficult to follow. I understand that and I want to be clear here that you are not alone 🙂 The transition from cooked to uncooked food should be a gradual process depending on your individual needs!
So, here is a cooked, vegetarian recipe which is great for a whole family, including children from the age of 18 months.
Ingredients:
2 medium sized eggplants
2 small zucchini
3 spring onions
5Â asparagus
3/4 cup white quinoa
2 cups of water

Himalayan salt
Tamari
Olive oil

Directions:
Cut eggplant and zucchini in tiny pieces, put in the baking dish, sprinkle with a bit of olive oil (4-5 tablespoons), 3-4 tablespoons of tamari, mix well and put in the oven for 200 degrees and grill for about 15 minutes (the eggplant should not be dry, if it is, add more olive oil. Grill for 230 degrees for the rest 5 minutes.
In the meantime, cook the quinoa in water for about 10 minutes (until it is soft) – the quinoa should be covered in water.

Melt a bit of butter in a saucepan and add chopped onion and asparagus. Add a pinch of salt and mix well. Add a bit of water and cook for about 3 minutes (don’t over cook it).
Once all is ready, mix your onion and asparagus with quinoa and finally put the mix in the baking dish together with eggplant and zucchini. Mix well and bake for another 5 minutes at 230 degrees.
Add chopped cherry tomatoes and yellow red bell pepper o the top and enjoy 🙂
Tip: If you eat eggs, you can also add 2-3 eggs into your mix.
We enjoy it with a great leafy green salad or wrap the mix into a Rome lettuce leaaf

Absolutne uzasne jidlo! Zabalila jsem ho do listu salatu a i bez Tamari a chrestu bylo vyborne. Dokonce i manzel chvalil a pridal ho na nas ´seznam´ varit opakovane, a to je co rict :). Moc dekujeme! V salatu bylo zabalene amatersky jako wrap, ale to jeÅ¡tÄ› dopilujeme, chut s nim byla bajecna. NavÃc jsem s quinoi pripravila i ranni kasi podle vaÅ¡eho tipu. Veganska jidla teprve objevujeme, ale moc radi mame chrestove a dynove rizoto.
